These are some of my favorite vegetarian and vegan recipes!

Quinoa with corn and black beans
Organic quinoa (cooked broth of your choice...for a delicious vegetable broth see video below)
garlic, onion, red pepper, fresh parsley, carrots, black beans, corn, spinach, broccoli...
sea salt, pepper, oregano, cumin, uh....can't remember
sesame oil and balsamic vinegar

Vegan "Meat" balls and Burgers
Please take note to follow the recipe in the video OR make sure you chop up some veggies and herbs for flavor. I personally use my "broth" for just about everything, especially beans, rice, quinoa, avocado, etc to cook with otherwise you just won't have the same mouthwatering flavor.

(Note" My Puerto Rican friend told me that this is similar to a dish his family makes called "Sofrito." IT's also very close to my salsa recipe. It's worth it to make a container every week so you have it handy every time you cook! Will save you time and add Flavor and Nutrition in everything you do!)
IF you are going to make these without my brothy sauce then you will definitely want to add some chopped peppers (sweet and spicy), tomatoes, onions, garlic and some herbs like parsley, cumin, oregano and basil.
IN this particular batch I used black beans, chick peas, portabello mushrooms and rice. It's also delicious with lentils as well!

Split Peas with Roasted Red Potatoes
Start by washing and chopping up your red potatoes, put in an oven proof pan with olive oil, sea salt and pepper. Put in oven at 450
Chop celery, carrots, onion and garlic
Sauté in pan with coconut oil on medium low heat.
Add peas (about 2 cups)
Then add about 4 cups water and or veggie broth. This is the broth I used:
Feel free to add more water if you like a thinner soup.
Cover and simmer until beans are mushy.
At about half way through is when I add my herbs
Sea salt, black pepper, cumin, cayenne, oregano, sage, thyme, and turmeric.
Cover and simmer…check for seasonings…
Add potatoes at the end and enjoy! :-)

quinoa with..........sauteed portabellas, garlic, onion, cayenne, banana pepper, spinach, shredded carrots, cauliflower, broccoli, pine nuts, sesame oil and balsamic vinegar......
Stewed Ginger Tomatoes
Chop garlic, onion and ginger.....saute in olive and or coconut oil. Add chopped tomatoes to saute while frying potatoes in another pan.
Add sea salt, curry, cayenne, cumin, oregano, pepper and tumeric....cook till tomatoes are soft.....then add fried potatoes.
Serve with pita.

Another Variation with Squash
Ginger Tomatoes with Spaghetti Squash
Cut squash in half and put cut side down in oven on 350 with about half inch of water. Bake for about 45 minutes.
Sautee chopped garlic, onion and ginger in olive or coconut oil. Add yellow, orange and red peppers...then add chopped tomatoes on low heat. Add cumin, curry, tumeric, oregano, sea salt, cayenne and cook till soft. Pour on top of squash or add squash to pan and serve! :-)

Quinoa with spinach, mushrooms and pinenuts
Quinoa with sauteed mushrooms, FRESH spinach, peppers, garlic, onions, sage, parsley, oregano and basil.....pine nuts and balsamic vinegar with sesame oil and sea salt. :-)
Spicy Quinoa with Hummus
I just used equal parts quinoa, orange lentils and brown lentils.....dehydrated ORGANIC veggie broth OR fresh made broth, sea salt, cumin, cayenne, turmeric, oregano, lot's of garlic and grated carrots! Warm....then mixed in some of my cold famous organic homemade hummus.......oh wow...what a wonderful combo...the hot and cold is wonderful too! How to make hummus here!
Heavenly Vegan Bean Tacos or Burritos
Ingredients:
tortillas: flour, water, sea salt, coconut oil
to make beans - (soak organic beans over night) then, Put in a blender:
FRESH tomatoes, red, green and yellow bell peppers, lot's of garlic, cayenne, poblano, onions, cilantro...........sea salt and cumin. Liquify.
Cook beans in sauce, instead of water. You may add more cayenne, cumin and sea salt to taste. And you can use half water and half fresh vegetable broth above.
Mash avocados with garlic, onion, cilantro and sea salt.
Top with fresh home made salsa! Salsa Recipe here

1 + bulb garlic
diced green and red pepper
2 large onions
carrots
celery
mushrooms
as much zucchini as you like
as many tomatoes as you like (if you use canned, whole, diced or crushed preferred over sauce)
brown onions, mushrooms and garlic in oil...then add celery, peppers, carrots...
add tomatoes
sea salt and pepper to taste
bay leaves, basil, oregano, sage, thyme, parsley, dash clove, cinnamon, anise
sugar or honey
Cover and cook, stirring occasionally...
Pour over pasta OR shredded zucchini and or squash! :-) I like the zucchini and squash better!

Gluten Free Vegan Spaghetti
Bake your Spaghetti Squash at 350
Saute your portabella mushrooms in olive oil and tomato juice you just squeezed from the fresh tomatoes you are going to blend up for the sauce.
Add some sea salt and pepper.
Make some tofu "cheese" optional:
mix firm non gmo organic tofu with your hands and add some sea salt, pepper, parsley, oregano, basil, sage, thyme, dash of vinegar and dash of olive oil...put in fridge till done.
Blend up fresh tomatoes, red, orange or yellow bell pepper, garlic, onion, oregano, basil, sage, thyme and sea salt. Add to sauteed mushrooms and reduce....turn off fire then add spinach.
Fork your spaghetti squash for the "noodles" add sauce and top with "cheese."

Roasted Potatoes and Veggies
roasted potatoes with sauteed organic tomatoes, zucchini, squash, mushrooms, onions, garlic, peppers, cabbage...season with sea salt and pepper, parsley and whatever other spice you might like!

Saute tons of garlic, onions, celery, carrot and red peppers (I used cayenne)
Add veggie or chicken broth and lentils........
season with sage, oregano, cumin, curry, tumeric, sea salt, pepper...............
Serve with roasted red potatoes...roasted with olive oil, garlic, sea salt, pepper, fresh rosemary and parsley...
