Tortellini Pasta Salad
Quick, easy, delightful and refreshing!!!
This was a creation in my old restaurant with a deli case. I wanted something colorful for bulk orders to display in the case and this one fit the bill!
Tortellini (boiled)
Fresh spinach, tomatoes and garlic
Fresh chopped basil, parsley and regano
sea salt
balsamic vinegar, red wine vinegar and olive oil
I use pine nuts and either goat cheese or gorgonzola...whatever you have on hand....
and top with fresh grated parmesan, asiago, parrano and/or romano........
Toss and serve...and don't forget to share!!! :-)

FRESH roasted tomatoes and garlic
Cut tomatoes in half and put on pan along with whole bulbs of garlic.
drizzle with olive oil, sea salt and pepper...
Roast/Bake till brown.........about half way through add fresh basil to the pan.
When it's done, add all ingredients to your food processor or blender........
put in a pan and over low heat add some HEAVY WHIPPING CREAM with chicken OR veggie base. For a vegan alternative use FRESH almond milk or cashew cream. Nut milk recipe here: http://dai.ly/x22e6bx
Season to your perfection and serve!!!

Wild salad with ladys thumbprints, lambs quarters, clover, birds foot, mustard, garden lettuce and spinach...sunflower seeds...oh can't forget the tomato, cucumber, onion, garlic, balsamic vinegar and olive oil.......sea salt, pepper. fresh basil leaves from the garden.
